Lomo de cerdo a la cubana (cuban style pork)


Serves 4 to 6 people

Ingredients

  • Betsita’s green Chimichurri
  • 12 to 18 corn tortillas
  • 1 kg of pork scoth loin
  • Fresh thyme to garnish
  • For pork marinade: 
  • 1/4 cup of canola oil
  • Zest and juice of 1 lemon
  • Juice of 3 oranges
  • Zest of 1 orange
  • 1 tbsp oregano
  • 1 tbsp cumin
  • 1 tbsp crushed garlic 
  • 2 to 3 tsp salt 
  • 1/4 tsp pepper

Method

  • Preheat the oven on fan bake at 85 degrees C.
  • Mix all the marinade ingredients in a cup.
  • Massage the pork loin in a baking tray with the marinade. 
  • Bake at 85 degrees C for 8 hours or until it riches secure temperature of 165 degrees C.
  • Shred the pork.
  • Deep the tortillas quickly in water to damp them(if prepackaged corn tortillas), before you cook them on a pan.  
  • Serve shredded pork on tortillas with chimichurri or serve on bread and make a cuban style sandwich.
  • Garnish with fresh thyme.
